The bag is stapled closed and bird-in-bag is placed on a regular roasting pan. No peeking!!!!! And be sure the bag does not touch the oven coils or sides. There's just something about a big, gelatinous cylinder, ridges and all, sitting in a bowl. And even though all my foodie magazines say that you have to have real cranberry sauce/relish, I haven't had one that I liked.
